This malt is a distinctly north american hybrid. The 6 row barley has a higher enzyme content (the diastic power). Consequently, it can actually process some sugars from other grains. This effect makes 6 row an ideal base grain for beers with non-barley content over 30%. For example, it is an excellent base malt for use in wheat beers. It is ideal for use in conjunction with adjuncts, like rice, corn, wheat, or rye.
